Holiday Ginger Cookies Recipe

Christmas prep is in FULL SWING at my house, and one of my favorite tasks of Christmas is BAKING!  I usually end up baking and freezing several dozen cookies before Christmas, if I can keep my family from eating them all first!

When I am looking for a great Christmas cookie recipe, I’m looking for a cookie that is pretty, flavorful, fast, and easy enough so that the kids can get in the kitchen and help me!  Baking is much more fun with the kids, and keeping a tradition of making Christmas cookies together is creating memories that I know they will remember throughout their whole lives.  So while the holiday season is busy, taking an afternoon to spend in a warm kitchen baking up treats with my girls is something that I definitely make time for!

The recipe I’m going to share with you today is a dairy-free recipe (a must in my house due to a dairy allergy) for Ginger Cookies.  I love these cookies because they come out soft and chewy, rather than crispy like gingerbread.  These are super fragrant cookies that will make your house smell like Christmas!

I have the recipe at making about 2 dozen cookies, but it really depends on how big of balls you roll the dough into – I get two dozen from dough balls about this size:


The red and white sugar add a great Christmasy touch, but you can use regular course sugar if that’s what you have! These cookies can be frozen in an airtight container for up to 2 months, so get a head start on that holiday baking!
